A little after Caterquip UK formed as a business, our buyer took in some what looked like pretty decent condition Potato Peelers. However, during the triage of the machines, it was evident why the machines had been discarded. The carborundum grit inside the machine has all but worn away. Leaving the owner/operator thinking its past its working life.
Alas, there is a solution which will extend the working life and give a greater return on investment. Potato Peelers aren’t the most expensive bits of equipment in a commercial kitchen, but like all things, they are getting more expensive to purchase, so maintaining them to get optimum performance and a good work life out them is essential.
Potato peelers are available in three conventional sizes. 14lb, 28lb and 56lb, roughly a quarter, half and full bag of potatoes. The larger machines are routinely found in Fish & Chip shops and the busier kitchen. 14lb & 28lb machines are often seen in small to medium venues where a modest to large amount of potatoes are on the menu. Commercial peelers can be used to peel Carrots, Parsnips and Swedes but these need to watched as their odd shape means they aren’t uniformly peeled. Some hand peeling is required after machine peeling.
There is no doubt a commercial potato peeler is of immense benefit to all kitchens, especially those where kitchen staff is limited. They save time and reduce the risk of knife related accidents.
Re Gritting Your Machine.
Buying the correctly sized kit gives you everything you require to achieve excellent results. Having done this several times myself, I would always suggest a warmish and sunny day and obviously a day when the peeler wont be needed for at least 24-30 hours. Warmth speeds up the curing process.
Each kit includes very good instructions, which if followed, will give your machine a astonishing new lease of life. Its also an opportunity to give the machine a deep clean as accrued peelings can become ugly, smelly and may even clog the drain tube.
A word of caution!…………
When using your newly re-gritted machine for the first time, don’t walk away as perhaps you did when the machine was worn. A newly gritted machine will peel a full loads in seconds and if you’re not careful, your potatoes will resemble Pomme Parisienne in no time at all. Newly grit surfaces are extremely efficient at removing peels.
There are numerous regritting kits on the market. Suppliers such as Re-Grit-It and Catervend offer a range of simple to apply kits.
