If its a large service pass you require, this offers everything. With a pass-through hot cupboard – ideal for accessing both sides. A triple wet well bain marie for holding volume hot foods and a smaller single wet well bain marie – ideal for holding sauces etc. Each gantry shelf is heated and controlled by a dimmer switch giving chef ultimate heat control. It also has a void under the composition surface for an under counter fridge perhaps for holding garnishes etc. There is also a practical set of stainless steel shelves to the front which would good for holding waiting cloths.
This a large unit designed for the busier establishment, perhaps a thriving Sunday carvery?
